Our 5-Stage Bake Process

The rhythm that turns WA-grown wheat into bread that keeps for the week.

Heritage WA grains stone-milled within 72 hours of bake day.

Our 60-year-old wild starter is refreshed every 8 hours.

Ferment

24 to 52 hours of slow, cold fermentation for deep flavour.

Every loaf hand-shaped, scored and final-proofed overnight.

Deck oven at 250°C — steam, crackle, crust, done.
